Recipe: Scallops with citrus, mustard dressing

         scallop served with citrus offers a delicate and original flavor. This mollusc, low in saturated fat, which contains Omega 3 prevent against cardiovascular disease.


  • 12 large scallops (if possible, with their coral)             
  • 1 red onion
  • 3 c. olive oil
  • 2 pink grapefruits
  • 100 g arugula
  • 1/2 curly
  • 2 c. currant vinegar
  • 1 c. of mustard
  • Salt, ground black pepper
  • 2 c. lemon juice
  • 2 c. honey
  • 1 c. buttery

For 4 people.
Prep: 20 minutes.


          Peel the onion and chop very finely. Wash the arugula and curly then drain them. Cut curly leaves into small pieces and peel off the rocket.
       Peel the grapefruit raw and detail the supreme quartered.
       For the dressing, pour into a bowl vinegar, oil, mustard, salt and pepper, then beat vigorously until all the sauce thickens slightly. Dip the salad leaves in the dressing before placing them on plates. Sprinkle with the chopped onion and draw over the supreme grapefruit.
        Drizzle lemon juice scallops and sprinkle with salt and pepper. In a non-stick pan, heat the butter and fry the scallops on each side for about 3 minutes. Deglaze with vermouth and prepare the scallops on the salad before serving.
